Guest guest Posted November 15, 2003 Report Share Posted November 15, 2003 My teen son had a couple of buddies overnight. The laughed and talked til the not so wee hours, and slept late. So, I made them my specialty, which they gobbled up in large amounts. Here's how I do it: I put a bit of olive oil in a big roasting pan. I turn on the oven to 400-425 F. Into the pan I throw in cubed raw potatoes, carrots, celery, onions or whatever other hard veggies I have. I bake them about 15-20 minutes till almost done, stirring occasionally. Meanwhile, I prepare mushrooms, sweet bell pepper, lots of garlic, frozen veggies like corn or green beans, chopped veggie ham, pepperoni or bacon, and maybe some herbs. When the other veggies are almost done, I throw in these, and stir them up together. Bake another 10 minutes, stir a bit, and top with grated cheese. Bake another couple of minutes til the cheese is melted. Serve with ketchup and HP sauce. Great way to get lots of veggies into a teen. We eat this any time of day. Mmmm, I feel so satisfied.
