I have been going through my recipe books to find a few side dish items to take to a Thanksgiving dinner gathering, and I might just be making this one. I have so many good recipes to choose from, but this is on the current list of possibilities. I think it would work veganized as well by just sprinkling the top with bread crumbs tossed in vegan margarine and garlic salt in place of the cheese. Special Brussels Sprouts 1 small onion, sliced 2 Tbs margarine 2 Tbs all-purpose flour 1 cup tomato juice 1 tsp sugar 1/2 tsp salt 1/8 tsp pepper 2 packages (10oz. each) frozen brussels sprouts or 1 1/4 pounds fresh brussels sprouts, cooked and drained 1/4 cup shredded cheddar cheese In a skillet, saute onion in the margarine until tender. Remove the onion and set aside. Blend flour into the drippings. Add tomato juice; cook and stir over low heat until thickened and smooth. Stir in the sugar, salt, pepper and onion. Arrange the brussels sprouts in a greased 1 quart baking dish; top with the tomato juice mixture. Sprinkle with cheese. Bake, uncovered at 350 degrees for 15 minutes.
