You need to read about different kinds of carbs, meaning which ones shoot

your blood sugar up fast and high and which do it gradually and slowly.

The latter are far better for you. Potatoes are worse than pure glucose

in the studies. No kidding.

 

Every time you spike your glucose you make your body damage itself by not

being able to burn off the excess sugar properly, and worse, if you add

grease into the mix, such as french fries or potato chips, your body will

stash the fat it can't dissolve. It's a vicious cycle.

 

Rule of thumb is, eat the carbs that are harder to digest. Whole grains

rather than processed. The closer to raw you can get, the better, as

processing always makes things easier to digest. (It is, in effect,

pre-digesting things for us.)
