My eldest son is Vegan and it's mainly a matter of avoiding rather than

seeking out. Having said this, I will add that being Vegan is expensive

because there are so many specialty items you'll require. We routinely

spend over $200 a week at Wild Oats to keep him in food, although

admittedly we buy things there all of us eat.

If you don't like cooking it becomes harder although, again, we do get

along reasonably well some weeks with minimal cooking and even some fast

food excursions. (yuck) He'll eat the BK Veggie sandwich, for instance,

and Taco Bell bean burritoes without cheese.

As PT said in an earlier post, check out the many recipes in our files

here. Amazing stuff there, and delicious, and many are indeed quick and

easy to fix.

Last night we needed a quick meal and had a stir fry over elbow noodles.

Nothing to it and yummy.

Good luck; I'm sure you'll do fine.

" The liberty of a democracy is not safe if the people tolerate the growth

of private power to a point where it becomes stronger than their

democratic State itself. What, in its essence, is Fascism, but ownership

of government by an individual, by a group or by any controlling private

power. "
