BUTTER PECAN CHEWIES

(Yield: 2 dozen)

 

2 eggs

1/2 cup butter or margarine, softened

2 cups firmly packed brown sugar

1 teaspoon vanilla extract

1 1/2 cups self-rising flour

1 cup chopped pecans

 

Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick

vegetable spray.

In a large mixing bowl, beat eggs until light and foamy. Beat in

sugar, vanilla, and butter until creamy. Blend in flour. Stir in

pecans. Spread evenly in prepared baking pan.

 

Bake 25 to 30 minutes or until the top is golden brown. Cool in pan

for 10 to 15 minutes. Cut into bars.
