Guest guest Posted October 26, 2003 Report Share Posted October 26, 2003 Creamy Cheesy Mashed Potatoes Yield: 6 servings 2 pounds (about 6 medium) potatoes, peeled and cut into 1-inch chunks 3/4 cup Evaporated Milk 1/4 cup(1/2 stick) butter or margarine 1 cup(4 ounces) shredded cheddar cheese Salt and ground black pepper to taste Procedures 1. PLACE potatoes in large saucepan. 2. Cover with water; bring to a boil. 3. Cook over medium-high heat for 15 to 20 minutes or until tender; drain. 4. RETURN potatoes to saucepan; add evaporated milk and butter. 5. Beat with hand-held mixer until smooth. 6. Stir in cheese. 7.
