Like Shawn, I'd also like to know if it's a reg dough or more chapati-like. Just off-hand if I had to guess the spices they use on it..cumin, chili powder, tumeric, garam masala, coriander powder, maybe some fennel seeds. They use a regular mozza topping, since much of their orders are more traditional. It works better than I thought, but I feel it doesn't add much. Ever wonder why you see Indians buying gallons of milk? It's to make a cheese curd called paneer. It's milk that has been heated, and has a culture added, and poured into a pan. When cool, it's cut into squares or slices. It has a smooth, creamy texture and taste unlike anything we have, and is wonderful in hot, spicy dishes. I have seen pizzas made with paneer, onion, garlic, ginger, and chili peppers. Can't you just taste that on your quivering tongue? K.
