Kinda Creamy Butternut Squash Soup

 

Ingredients:

1 Butternut Squash

2 medium size sweet onions - chopped

3 cups veggie/no-chicken broth

1 cup soy milk (more or less)

8 oz Granny Smith applesauce

2 tablespoons plus a little extra margarine

1/2 tsp nutmeg

1/4 tsp ground cumin

1/8 tsp red chili powder

tsp sugar (optional)

1/4 tsp black pepper (optional)

 

 

Directions:

Preheat oven to 400 degrees. Cut Butternut Squash in half and scoop

out the inner part with the seeds. Brush all over squash with a

little melted margarine. Roast in the oven for 30-35 minutes or until

tender.

Half way through roasting squash, saute onions in the 2 tablespoons

of margarine in a large pot. Add nutmeg, cumin, chili powder, and

sugar. You want to get an even, brown carmemlization on the onions so

stir alot over med-low heat.

Take out squash and let cool for a few minutes so you can just peel

off the skin.

Puree squash and onions. Heat stock over medium heat in the same pot

you cooked onions. Stir in the pureed squash/onions into pot with

stock. Stir in applesauce and bring almost to boil. Turn off the

heat, add more or less a cup of soymilk according to your taste.

Season with black pepper.

 

*Note, no extra salt is added b/c of veggie stock. If low-sodium

stock or sweetened applesauce is used, prob wouldn't need to add

sugar.

Many thanks for posting this recipe - it sounds great (all my favourite

spices!) and I especially like the idea of adding apples to the squash.

Shall try it soonish!
