My name is Jinnie, I'm 22 years old and live in Birmingham, UK. I'm unemployed and on benefits at the moment due to suffering from depression. I'm 5'5 " tall, weigh about 189 lbs, and have about an inch of mid-blonde hair and blue eyes. I've been mostly vegetarian since I was 13 (my family wouldn't let me stop eating fish) and vegetarian " properly " since I was 18 (I don't mean to start any flame wars on the various shades of vegetarianism which is why properly is in quote marks). The following recipe is one I first tried when I was a small girl, and unfortunately I have no idea where my Gran got the recipe from, so I can't credit the original recipe book. Stuffed Pancakes For the pancakes: 125g(4oz) plain flour 1/2 tsp salt 1 large egg, beaten 300ml(1/2pt) milk Vegetable oil for frying Sieve the flour and salt into a large bowl. Make a well in the centre and add the beaten egg and the milk. Whisk together thouroughly until smooth. Heat the oil in a large frying pan and use a small amount of mixture at a time to make thin (but not too thin) pancakes. TIP: Put the pancakes on a plate and separate each one with a pice of kitchen towel. This will stop them sticking together and absorb excess oil. For the filling: 2 or 3 slices of bread turned into breadcrumbs 1 tin chopped tomatoes in juice Small handful walnuts 1 tsp Marmite 1 onion 1 clove garlic Vegetable oil for frying Mix together the breadcrumbs and tomatoes and leave so the juice can soak in. Meanwhile, peel and slice the onion and garlic and fry gently until soft and golden. Mix into the tomatoes and breadcrumbs with the walnuts and Marmite. Spoon a little of the mixture onto each pancake and roll up. Serve and enjoy! If you want you can top the pancakes of with cheese sauce (see below) or top with a little grated cheese and grill. (Optional) For the topping: 1oz butter/marge/low-fat spread 3 tbsp plain white flour 1/2 pt milk 2/3 cup strong cheddar (I got this recipe from a book written in the 1950s, Vegetarian Cookery by Janet Walker, which is why the amounts are imperial. I have no idea how much a cup is so use cheese to taste. A little mustard (about 1 tsp) gives the cheese sauce a nice bite) Melt butter over gentle heat, add flour and stir to blend well. Gradually add milk while stirring vigorously until smooth. Add the cheese (and mustard, if using) and stir and heat until the cheese has melted into the sauce.
