Tomato Basil Mozzarella Frittata

Ingredients:

3 eggs

3-10 cherry tomatoes chopped in half (use as little or as many as

you want)

3-10 fresh basil leaves chopped (use as little or as many as you

want)

Shredded mozzarella again as little or as much desired. We usually

include about a quarter cup

Salt and pepper

1 teaspoon to scant tablespoon olive oil

_ teaspoon chopped garlic

 

Preheat oven to 450 or broil

Place rack in middle not to close to broiling element

 

Beat the eggs then mix all ingredients in a bowl except the cheese.

Pour olive oil into medium hot skillet (with metal handle) then add

garlic for one minute. Lower the heat and add the remainder of the

ingredients except the cheese. Coat the bottom of the pan with the

egg mixture and using a spatula replace some of the cooked egg with

uncooked by lifting up the edges. Do this for about 30 seconds to a

minute then remove. The majority of the eggs will not be cooked yet!

Add the cheese to the top and place skillet in the oven. Check at

two to three minutes and keep checking until the eggs are cooked –

they usually rise and the appearance is a lot like a pizza!. Don't

over cook. If the eggs look a slight bit soft and underdone they

will continue to cook after being taken out of the oven. Let rest

for a couple of minutes and enjoy!
