"It’s not gluttony, weak will, or an oral personality that keep some of us tied to certain foods. There’s a biochemical reason many of us feel we can’t live without our daily meat, cheese, or sugar fix. Cheese, for example, contains high levels of casein, a protein that breaks apart during digestion to produce morphine-like opiate compounds, called casomorphins. These opiates are believed to be responsible for the mother-infant bond that occurs during nursing. It’s no surprise many of us feel bonded to the refrigerator.”-- Neal Barnard MD Celebrated researcher, bestselling author, founder Physicians Committee for Responsible Medicine.

KEYNOTE LECTURE: Breaking the Food Seduction

"A reduction in beef and other meat consumption is the most potent single act you can take to halt the destruction of our environment and preserve our natural resources. Our choices do matter. What's healthiest for each of us personally is also healthiest for the life support system of our precious, but wounded planet." -- John Robbins, environmentalist, founder EarthSave, bestselling author The Food Revolution

"Blood pressure fell within hours of starting the very low-fat vegan diet. Twenty percent of the people were on blood pressure medications the day they began the program. In almost every case the medications were stopped that day. Yet the blood pressure dropped significantly by the second day. This data is from over 1,000 participants at the McDougall Program at St. Helena Hospital in the Napa Valley of California." -- John McDougall MD, bestselling author and Medical Director of the 10-day, live-in, McDougall Program in Santa Rosa, California. Talk: The Healthiest Diet

"Following a strict vegetarian diet is not as important as eating a diet rich in fruits and vegetables. A vegetarian whose diet is mainly refined grains, cold breakfast cereals, processed health-food-store products, vegetarian fast foods, white rice, and pasta will be worse off than a person who eats a little chicken or eggs, for example, but consumes a larger amount of fruits, vegetables, and beans."-- Joel Fuhrman., MD, board-certified family physician specializng in preventing and reversing disease through nutritional and natural methods. Talk: Eat To Live

"The China Health Project's primary finding is that the Chinese who eat the least fat and animal products have substantially lower rates of cancer, heart attack, and several other chronic degenerative diseases." -- T. Colin Campbell, PhD Jacob Schulman Professor of Nutritional Biochemistry at Cornell University, director of the Oxford-Cornell China Study. Talk: The China Study

"Presently, Western civilization has the luxury of complete knowledge of what accounts for the leading cause of death in men and women. No further techniques or inventions are needed. The providers of medical care must creatively deploy this information in their own lives and the lives of their patients. The present superficial approach of no red meat and taking the skin off chicken is a meaningless insult to scholars of nutritive science who recognize the need for sophistication and individualization to prevent this disease. Our lethargy of acceptance of atherosclerosis as inevitable is no longer tolerable in light of present knowledge, which can prevent this and many other diseases of affluence. Plant-based nutrition provides us with a pathway to escape the coronary artery disease epidemic."-- Caldwell B. Esselstyn, Jr., MD, Preventive Cardiology Consultant Department of General Surgery, Cleveland

Clinic Foundation, author of the longest running study which proves that heart disease can be arrested or reversed by a low fat, plant-based diet. Talk: Becoming Heart Attack Proof

"The belief that cancer is the result of exposure to carcinogenic toxins is partially correct. But it is extremely misleading. The truth about cancer is more complex, and much more promising. For it appears that the primary culprit in the development of most cancer is observable and controllable: it is the consumption of animal protein."-- Doug Lisle, PhD, Director of Research for TrueNorth Health Center, bestselling author, and psychotherapist. Talk: The Pleasure Trap

"I was initially propelled to make healthier choices by the fear of a cancer curtain call. But the life-affirming consequences of those choices were so immediate and so profound that I needed no additional motivation to continue choosing them. Over time, as new, healthier habits became firmly established, and then deeply entrenched, it became almost effortless to nourish and sustain my newfound vibrancy and robust sense of aliveness. Now that I find myself on the other side of the brick wall I had crashed into, I can assure you that better choices unquestionably lead to a better life." -- Tom Gegax Founder, Tires Plus -- from cancer and the brink of professional ruin to revitalizing mind, body and spirit, and growing his company to a $200 million industry leader. Talk: The Enlightened Executive

Just added!"As we stand on the threshold of a new millennium, it is time to free ourselves, to jettison our illusions and fears and transform age-old challenges with new thinking. We can conceive of peace as not simply the absence of violence but the active presence of the capacity for a higher evolution of human awareness, of respect, trust, and integrity."-- Represenative Dennis Kucinich (D - Ohio) presidential candidate. Talk: A Safe & Healthy Food Supply for America

"When we produce any graphic movement, such as handwriting, we are actually "brainwriting" and leaving our "brain prints" behind on the paper. Our brain prints reveal who we are and how we think, feel, and behave. They are an x-ray of our mind. And, like fingerprints, they remain uniquely our own forever. No two people ever have the exact same brain prints. When we look at your handwriting, nearly everything about your physical, intellectual and emotional states is revealed." -- Andrea McNichol Leading handwriting expert, University of California instructor, bestselling author, consultant to the FBI, Scotland Yard, the State Department, Fortune 500 companies and police departments around the country, investigator on many high profile criminal cases. . Talk: Handwriting and your Health

"By extending one's strength to rescue creatures and prevent their destruction, one creates wholesome karma. This goodness fosters healing and permits repentance for harm. It reduces the burden of negative karma for the individual or society who sponsors the liberation. The madness that creates the need for war appears as it is: the wind of heedless killing karma done by us all; the alternative to war is fostering of life by taking responsibility for our planet's welfare, beginning at the dining table."-- Rev. Heng Sure, head monk, City of 10,000 Buddhas, Ukiah, California, Director of the Berkeley Buddhist Monastery.

"Judaism clearly teaches that we are responsible for caring for our planet, treating animals humanely, and making dietary choices to increase the holiness in our lives. Jews have been discussing these issues since ancient times. Great sages of the past imagine our original state in the garden of Eden as our ideal -- including peace, harmony between all animals and humans, and a vegetarian diet."-- Rabbi Sheryl Nosan-Blank. Rabbi of Temple Beth Torah, Rabbi Nosan-Blank fosters love of Jewish living and learning through teaching, modeling, sharing and providing experiences to inspire Jewish children and adults, students and teachers. Panel: Spirituality and Dietary Choices
