Dear Friends, It is with great gratitude to all of you who have supported me through the years that I continue to offer my services. Because of your continued support, Michelle, Matt, and I are all able to play fulltime doing what we love.

The theme that speaks to me in 2003 is BALANCE. Spirit is constantly whispering it in my ear. Sometimes ever so quietly, and other times pretty loudly. I am learning that it is important to find balance in our eating, work to play ratio, time spent working on personal growth, and time spent with our family and friends. When one of these areas is out of balance, it reflects strongly in my emotional, spiritual, and physical well-being. I find myself feeling less than excellent when I am not giving enough attention to an important area of my life or when I set standards for myself that are too high or worry about the judgments others place on me. It is up to each of us to decide what works and WHAT FEELS GOOD.

That's really what it is all about—feeling good. If eating pizza every day felt good, well then I just might do that. For me, drinking a nice big glass of fresh or powdered green juice in the morning feels good. It helps to alkalize and mineralize my cells, which in turn puts me in a very uplifted and joyful mood—it helps me feel balanced.

Over the years, I have found that my feeling of well-being shifts according to how I am treating my body and whether I am truly loving myself. What helps me find balance is skin brushing daily, practicing Bikram yoga at least 3 times a week, jumping on my Rebounder, drinking green juice, eating fruit daily, eating a nice big green salad daily, getting 7 to 8 hours of sleep, fasting occasionally, conscious indulgences, and making the rest up as I go along. It's always evolving.

Through all the changes, the one thing I can count on, is that my guidance system will keep whispering to me, telling me what I need to do in order to feel good. Sometimes it is through a friend telling me a story or showing me a book, a line in a movie that sticks with me, an uplifiting magazine article, or a motivational audio tape. It is up to me to listen, or not.

This year I choose balance. I choose to follow my bliss, knowing that well-being will follow. When I named my company Pure Joy Living Foods five years ago, I was really listening and was feeling amazing balance. I am finding that balance again and it is Pure Joy!

It is my desire to be available for those in need of a little motivation or support. The most effective way I know to share the path to a balanced, healthy lifestyle is through teaching classes, personal in-home consultations, and making available products and recipes that I believe in. This year, Matt, Michelle, and I are working to bring you new products such as recipe books, Tooth Juice, nut mix, desserts, DVD's presenting beginning through advanced food preparation, classes world wide, and reasonably priced local dinners. All coconut oil is not the same. The source Pure Joy Living Foods buys from in the Philipines is the absolute best we can find. Matt Samuelson has been there personally and checked on the integrity of San Benito Farms where we purchase our oil. It is indeed raw, completely unfiltered and carefully hand pressed which is a slow, unique process.

Melt-In-Your-Mouth Coconut Oil FudgeGreat Gift Idea!

1 1/2 cups Pure Joy Coconut Oil (liquified by placing in a bowl of hot water)1 1/2 cups Rapadura (a whole unprocessed natural sugar), Sucanat or honey1 cup carob powder or organic cocoa powder1/2 tsp. Celtic sea salt1/8 vanilla bean (scrape the inner beans out with a spoon) or 1 tsp. vanilla extractMelt the coconut oil. If using Rapadura or Sucanat, blend it in a dry blender until it becomes a light powder.Mix all ingredients together in a blender and blend until smooth.

Pour into a large glass lasagna pan or something equivalent in size. Let set up at room temperature (below 70 degrees) or in the refrigerator. Cut into small candy sized pieces. Store in the refrigerator for up to 12 months.
