Bring to a boil. Add to blender with: 2 1/2 cups cooked pumpkin 1 tablespoon ground flax seed Blend altogether until smooth. Pour into pre-baked crust and refrigerator until firm, several hours. Must be kept cool. The crust I use is a " crumb " crust style. 1 cup almonds, 1 cup raisins and 1 cup gluten-free grain flakes (I use oats, but millet works fine too). Blend until crumbly and feels sort of moist. Press into a pie shell. The filling can be poured in then without anything else being done to it. It's a very quick, easy, pleasant-tasting " crust " .
