There is plenty of other wet/sticky stuff in the recipe, and the pecans are " chopped " , not ground, so they must be there for texture/flavor, not binding. My personal opinion is that it would TASTE a lot better with the pecans (and they're full of healthy fats), but a lot of folks I know would disagree with me. I LOVE texture (crunchy p.b., nuts in brownies, etc), but I have a sister and a couple of sister-in-laws who just loathe anything crunchy in something that's basically smooth. Guest guest Posted November 12, 2003 Report Share Posted November 12, 2003 * Exported from MasterCook * Garbanzo Croquettes Adapted to GF Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Entree Grains Legumes Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups cooked garbanzos -- coarsely blended 2 1/2 cups cooked brown rice 2 slices (gf) bread -- crumbled, soaked in 1/4 cup garbanzo broth 2 tablespoons peanut or nut butter 1/2 cup chopped pecans -- finely chopped 2 tablespoons chopped onion, OR 1 tablespoon onion powder 2 tablespoons soy sauce 2 tablespoons oil 1/2 teaspoon poultry seasoning 1/2 teaspoon salt 1/2 teaspoon celery seed ( gf) bread crumbs -- to make desired consistency Mix well with hands and form into croquettes. As Lisa said, pecans are just there for texture and flavor. You could substitute any nut you like or, if you're allergic to nuts, you could use sunflower or pumpkin seeds.
