Guest guest Posted October 31, 2003 Report Share Posted October 31, 2003 Brown Lentil Salad (Miser Salata) Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried lentils 4 cups water 1 medium cucumber -- peeled and diced 2 tomatoes -- diced 1/2 cup chopped parsley 1/2 jalapeno -- seeded and minced 2 tablespoons vinegar 2 tablespoons olive oil 1 tablespoon bragg's 1 tablespoon minced onion -- or to taste 1 clove garlic -- (1 or 2) minced 1 teaspoon Dijon-style mustard 1/2 teaspoon minced ginger root 1. Sort and rinse lentils. In a large saucepan, combine lentils and water and bring to a boil. Boil over medium high heat for 15 to 20 minutes, until lentils are tender. Add more water during cooking, if necessary. Drain and cool to room temperature. {OR sprout the lentils instead} 2. In a salad bowl, combine cooled lentils, cucumber, tomatoes, parsley, and jalapeno. In a small bowl, stir together vinegar, oil, bragg's, onion, garlic, mustard, and ginger. Pour over salad and toss gently to mix well.
