Guest guest Posted October 31, 2003 Report Share Posted October 31, 2003 Quinoa Vegetable Soup 1/4 cup uncooked quinoa, rinsed and drained 1/2 cup diced carrots 1/4 cup diced celery 1/4 cup diced green or red bell pepper 2 cloves garlic, peeled and chopped 4 cups water or vegetable broth 1 teaspoon sea salt, optional 1/4 cup chopped chives Fresh chopped parsley, optional In a medium saucepan, combine the quinoa, carrots, celery, pepper, garlic and water or broth and bring to a boil. Simmer 20-30 minutes, or until the vegetables are tender and the quinoa is cooked. Season to taste and sprinkle with chives and parsley, if desired.
