Cover with twice as much water and soak overnight. Drain them in the morning and put them in a large pot. Add 7 cups of water. Bring to a boil, then lower the heat to simmer. When almost done, season with salt to taste. Use this method for soybeans and garbanzos. Season as indicated in the recipe you are following. Quick start method: Sort the beans carefully. Wash and drain them. Combine 1 pound (2 1/4 cups) dry beans and 7 cups water in large pot. Bring them to a full boil. Turn off the heat. Let them stand for 1 hour more. Drain off the water. Add 5 cups of fresh water. Bring to a boil, then lower heat and simmer until almost done. Season as indicated in the recipe you are following.
