I've spent the afternoon preparing a meal for guests coming this week-end.

Because my husband cannot eat wheat or gluten, I am preparing the entire meal

" gluten free " . I was in the mood to create. . .and it turned out so delicious.

.. .that I thought I'd share what I made for the main course in case anyone else

would like to experiment. Here's what I did:

 

Gluten-free Patties with Gravy

 

I ground hazelnuts, walnuts, and almonds in the food processor (at least three

cups, total). I added two blocks of firm tofu and about 8 - 10 cups of cooked,

white rice. Then I mixed in food processor until all smooth. I added about 1

cup of nutritional yeast, 4 onions, two chopped zucchini, and a liberal amount

of wheat-free tamari, garlic powder, onion salt, salt, Italian seasoning, and

sage. I fried them in olive oil, making each pattie with an ice cream scoop so

that they were consistently the same. They are delicious just like this. . .but

because we won't be eating them until Saturday, I placed them in rows in a

casserole dish. I will be pouring cashew gravy over them (recipe in archives)

and baking them later.

 

Most vegetarian patty recipes contain either oats or some other gluten product,

but this turned out really well " without " .

 

A friend stopped by who is neither gluten-free, nor vegetarian. She loved them.

.. .and I sent some home with her to share with her husband for supper tonight.

 

:) Just had to share. . .maybe this idea will spark an idea in someone else. .
