Guest guest Posted October 7, 2003 Report Share Posted October 7, 2003 Tofu Roast Source: Country Kitchen Collection 2 lbs. tofu 1/4 cup chopped onion 1/2 cup chopped celery 2 Tbspl oil or water 1/2 cup vegan mayonnaise 1/4 cup soy sauce (wheat free) 3/4 tsp. salt or less 2 cups bread crumbs (gluten-free is necessary) 1/8 tsp. garlic powder 1/8 tsp. sage Drain and mash tofu. Saute onion and celery in water and/or oil. (More water will be necessary if not using oil while sauteing.) Mix all ingredients and place in greased loaf pan. Bake at 350° for 40 minutes.
