Mix together in a blender into a coarse paste: 2 small or 1 large hard (unripe) mangoes (or apples), chopped into chunks (about 2 cups) 1 Tablespoon roasted peanuts 1 Tablespoon brown sugar (or more to taste) 1 Tablespoon fresh coriander leaves (cilantro) 1 teaspoon coriander seeds 1 teaspoon cumin seeds 1 teaspoon salt (or to taste) 1 teaspoon hot red pepper powder sugar to taste Heat in saucepan until the seeds pop: 1 Tablespoon vegetable oil pinch hing 1/2 teaspoon cumin/mustard/sesame seed mixture Stir the oil mixture into the mango mixture.
