What is Gluten?

Dear Rebecca,

 

You can not wash the gluten out of the grain or the flour. Gluten in

the protien found in all grains. The grains Wheat, Rye, and Barley are

at one end of the family.. Oats are in the middle.. then Corn, Rice,

Buckwheat, ECt are at the other. Not everyone who is allergic to Wheat

may be allergic to Rye and Barley. Some have a condition call Celiac

Sprue which causes them to react to the gluten in Wheat, Rye, Barley and

sometimes Oats. Before going on a gluten free diet I would consult your

Doctor on doing at least the blood work for Celiac Sprue. You will want

that in your medical chart if it is what you have. If you go gluten

free it is harder to test for this.

 

There are a ton of websites that are for Gluten-free diets. But you

will have to avoid all Wheat if you are intolerant to it.
