Guest guest Posted August 28, 2003 Report Share Posted August 28, 2003 Corn and Black Bean Salad Source: Previously posted to Veg Recipes by Dancer 2 cs. cooked corn kernels (about 3 ears) 1 can (15-ounce) black beans, rinsed and drained 1 c. chopped tomatoes 1/2 c. mild onions, chopped 2 tbsps. chopped cilantro 1 tbsp. lime juice 1 tbsp. rice vinegar or other mild vinegar (may substitute lemon juice) 2 tbsps. olive oil salt and pepper to taste (pepper is optional) Combine corn, beans, tomatoes, onions and cilantro in a bowl. Mix remaining ingredients in a cup. Pour over corn mixture and toss well. Let sit at least 30 minutes at room temperature. Check for seasoning. Makes 4 servings.
