Guest guest Posted August 27, 2003 Report Share Posted August 27, 2003 ***Here's a great recipe that makes use of our summer gardens!*** Gazpacho Source: LaDonna 2 cups chopped tomato 1 cup chopped and seeded green pepper 1 cup peeled and chopped cucumber 1/2 cup chopped onion 4 teaspoons chopped parsley 2 teaspoons chives 2 cloves garlic, chopped 5 T. fresh lemon juice 3 T. olive oil OR flax seed oil 2 tsp. sea salt 4 cups tomato juice or V-8 (for best results, use fresh, raw tomato juice from garden tomatoes) Combine and chill at least 8 hours before serving.
