Hi, Kimberly!

 

Just wanted to give you a warm welcome from someone else who had a son

with autistic symptoms at age 2. My darling is now 4 years old, and

like yours, 100% fine - no symptoms whatsoever - in fact, he's in

kindergarten a year early because he is already starting to read and do

math. He is celiac and has a skin prick positive dairy allergy.

 

In regards to bread: have you tried Bob's Red Mill All Purpose GF

flour? It is made with chickpea flour, fava flour, and sorghum flour

(among other things like tapioca and potato starches) so it has some

protein and some fiber. It also tastes wonderful, and is very easy to

work with. I actually use regular cookbooks and can sub the Bob's Flour

as long as I add a tsp. or 2 of xanthan gum to recipes. They also make

a bread mix using the same flour that is great.

 

We also buy Food For Life Buthanese Red Rice Bread and it is quite good

and hearty.

 

And lastly, there is a really nice support group for parents of

allergic kids, and most of the kids are little like ours - it is called

TerrificKidsWFA. Not too many recipes there, but good support. You'll

find GREAT recipes here!

Heidi, I also love Bob's Red Mill All Purpose GF flour. . .and bread mix! I

use the bread mix in the automatic bread baker, and have found that flax

seed gel works great for binding instead of eggs. The flavor is delicious

and my husband (the GF family member) prefers it over any other GF bread

we've found or tried. The flax seed " spoils " in the product more quickly

than eggs to, though, so I keep it in the fridge after baking.

 

Thanks for the link to TerrificKidsWFA. It's nice to be able to work

together and help each other out with resources. :)

This is off the subject of Bob's Red Mill, I totally agree with you guys

though, they have terrific products. My question is this, I got some

coconut meat in a can and wondered how to use it. If anyone has any

ideas I'd love to hear from you. Judy
