Both myself and my 5 year old son are wheat intolerant. He began having Autistic like symptoms when he was, maybe, 2. T'was such a good thing I found out what the real problem was, for he is now FINE! Long as I keep him off the stuff that bothers him. Please pardon my questions, but some of this is so very new to me. Where does one obtain Mesquite beans. The flour sounds awesome and nutritious. I've been hesitant to make any " white " bread because it seems to be so carbo/starchy and maybe more " empty " of real nutrition. I have taken to making Kamut bread and occasionally we can handle Spelt bread. I love the taste of both those grains. Anyway....Thanks, nice to be here. We are a " semi-quiet " group, but when list members have something to share, it is usually VERY helpful! Please check out our archives for some terrific recipes. All are plant-based and gluten free. You might also wish to check out another list that one of our V and GF members moderates called GFCFrecipes . It is not a vegetarian list, but because it is gluten and casiene free there are many good recipes that those of us on a vegan lifestyle can use. The mesquite beans are mostly available in the states which grown them, but you can purchase them off the internet as well if you do that.
