Guest guest Posted August 17, 2003 Report Share Posted August 17, 2003 Bean & Radicchio Salad 1 1/2 cups cooked small red beans 1 1/2 cups cooked butter beans 1 small head of radicchio 1 tablespoon minced red onion (optional) 3 tablespoons fresh lemon juice 2 tablespoons extra-virgin olive oil 1/4 teaspoon sea salt Combine the beans in a serving bowl. Cut the radicchio into fine shreds about 1 1/2 inches long. Mix them into the beans along with the minced red onion, if using. Add the lemon juice, olive oil, and salt.
