Check your icing sugar to be sure it does not contain wheat starch as a filler. Chocolate Frosting/Icing (Jean Pare Company's Coming Potato Book) 1/4 c Warm mashed potatoes 2 3/4 c icing sugar 2 tbsp cocoa, sifted 1/2 tsp vanilla 2 tbsp warm water or coffee Sieve or rice potatoes into a medium bowl. Sift icing sugar and cocoa into potatoes. Stir. Slowly beat in vanilla and water, adding more water or icing sugar to make desired spreading consistency.
