Chocolate Frosting

Recommended Posts

This unusual recipe uses warm mashed potatoes in place of dairy or fat. Check

your icing sugar to be sure it does not contain wheat starch as a filler.

 

Chocolate Frosting/Icing

(Jean Pare Company's Coming Potato Book)

 

1/4 c Warm mashed potatoes

2 3/4 c icing sugar

2 tbsp cocoa, sifted

1/2 tsp vanilla

2 tbsp warm water or coffee

 

Sieve or rice potatoes into a medium bowl.

 

Sift icing sugar and cocoa into potatoes. Stir.

 

Slowly beat in vanilla and water, adding more water or icing sugar to make

desired spreading consistency.

 

Makes 1 1/4 c.
