Guest guest Posted August 15, 2003 Report Share Posted August 15, 2003 Quick Chilled Cucumber Soup 3 medium (6 " ) cucumbers, peeled, seeded and coarsely chopped 1 small or 1/2 large fresh pineapple, peeled, cored and coarsely chopped 6 large fresh basil leaves 6 large fresh mint leaves small mint and basil leaves for garnish In a blender or food processor, combine chopped cucumber, chopped pineapple, large basil and mint leaves.
