Guest guest Posted August 5, 2003 Report Share Posted August 5, 2003 Mushroom Leek Miso Soup 4 T. miso 4 cups water 3 cups sliced mushrooms 3/4 cup leeks, sliced in half circles 1 T. soy oil 1 t. minced garlic 1/4 t. salt Dissolve miso in water. In a large skillet, sauté mushrooms and leeks in oil until tender. Add garlic and cook for 1/2 minute. Add miso dissolved in water and salt. Simmer 15 minutes. Serve hot. Serves: 4.
