Breakfast Lentils

Source: Fun with Natural Foods

 

1 cup lentils

3/4 tsp. salt

1 tsp. corn oil

3 cups water

Pinch sweet basil (optional)

1/2 onion, chopped fine

Toast, spread with vegan margarine or Vegannaise (gluten-free toast/or whole

grain)

 

Sort through lentils and rinse clean. Bring water and lentils to a boil; add

salt, oil, basil, and onion. Cover and simmer for 30 - 45 minutes until

lentils are tender. Add more water if necessary to make a thick soupy

consistency. Serve hot lentils over toast spread with margarine. Top with

soy

yogurt and a little chopped parsley and green onion if desired. Served with

fruit and a glass of soymilk, this makes a very nutritional and satisfying

breakfast or supper.
