Guest guest Posted July 6, 2003 Report Share Posted July 6, 2003 Minty Carob Pudding 1/2 cup honey (or alternative; maple syrup or agave syrup) 1/3 cup carob powder 4 tsp. vanilla 1 tsp. peppermint extract 1/2 tsp. cinnamon 1/8 tsp. salt 1 1/4 lbs. tofu, well-drained or pressed Combine in a blender; adding tofu to other ingredients, piece-by-piece until well blended. If beating by hand, mash tofu well and beat with other ingredients. In small saucepan, mix: 1/2 tsp. agar-agar powder or 1 1/2 tsp. agar-agar flakes 1/2 cup water Stir to dissolve. Bring to a boil and simmer for 5 minutes. Then add to the tofu mixture quickly and blend until very smooth. Chill for 2 - 3 hours until set.
