Guest guest Posted July 3, 2003 Report Share Posted July 3, 2003 Company Fruit Soup Source: Weimar Cookbook --- vintage edition 1/2 cup tapioca (quick cooking) 2 quarts water 2 cups small prunes 2 large apples, diced 1/2 cup dried raisins 1/2 cup dried apricots 1/2 cup dried peaches 2 bananas 1/2 cup dried pears Juice of 1 lemon 2 cups fruit juice (1 cup orange and 1 cup grape or pineapple) Pinch of salt Cook tapioca in 2 quarts of water until half done. Add fruit, and fruit juice. Add salt. Cook until tapioca is done and fruits are soft. Serve hot or cold. Dried cherries make a very good addition to the soup if they can be secured.
