Guest guest Posted July 2, 2003 Report Share Posted July 2, 2003 Tofu Potato Patties 6 oz firm tofu, drained and mashed 3 Tbsp. olive oil 1 medium onion, chopped 3 cups mashed potatoes 1/4 cup fresh parsley sprigs, minced 1/2 tsp. salt In a frying pan over low/medium heat, saute the onion in 1 tablespoon of the oil until golden. In a large mixing bowl, mix all the ingredients except the remaining 2 tablespoons oil. Form the patty mixture into 12 patties and fry over medium heat using remaining olive oil or non-stick spray.
