Guest guest Posted July 1, 2003 Report Share Posted July 1, 2003 Omelet ala Garbanzo 2 cups garbanzo bean flour 1 sweet onion, chopped 2 Roma tomatoes, diced 1 small piece of ginger, grated 1 stalk of coriander, leaves only 2 cloves of garlic, minced 1/2 tsp. chilli powder Water as needed Salt to taste Chop the onions, coriander, and garlic until fine. In a food processor, blend tomatoes with ginger to form a paste. Add all ingredients to garbanzo bean flour and stir well. Add enough water so that the mixture is a consistency that is pourable. Heat a prepared skillet on medium high heat. Spread batter on skillet to form a thin pancake. Brown on both sides. Remove from heat and serve with your favorite filling (fresh salsa) or ketchup.
