Guest guest Posted June 30, 2003 Report Share Posted June 30, 2003 * Exported from MasterCook * Minted Melon Salad Recipe By :Taste of Home Serving Size : 13 Preparation Time :0:00 Categories : Fruit Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup water 3/4 cup sugar 3 tablespoons lime juice 1 1/2 teaspoons chopped fresh mint 3/4 teaspoon anise seed -- optional 1 pinch salt 5 cups cubed watermelon 3 cups cubed canteloupe 3 cups cubed honeydew 2 cups peach slices 1 cup fresh blueberries Combine water, sugar, lime juice, mint, anise seed, and salt in a small saucepan. Bring to a boil. Boil for 2 minutes; remove from heat. Cover and cool completely. Place all fruit in a large bowl; add syrup and stir to coat fruit. Cover, chill for at least 2 hours, stirring occasionally. Drain before serving.
