Salsa Bean Dip

 

16 oz. refried beans

1/2 cup salsa of choice

1/2 cup soy cheese, cheddar style, shredded

 

HEAT beans, salsa and cheese in medium saucepan over medium-high heat for 3 to 4

minutes or until bubbly and soy cheese is melted.

 

SERVE with tortilla chips.

 

VARIATIONS: Add ¼ cup Diced Green Chiles or 2 teaspoons Diced Jalapeños.

Where do you find soy cheese that melts and that is vegan? We use soymage

vegan, and you can nuke it for hours and it just gets crispy. Veganrella has

oats. The only stuff I've found that melts is from imearthkind.com, and we

didn't like it as much as the soymage.

 

We've actually made a dip exactly like this, and the cheese never melted. So -

I'm curious - what do you use? Or is the term " melt " subjective? LOL

Good question! The best answer is " make your own " soy cheese. I like the

Benton Sister's recipe (I believe it is in the archives), but my very

favorite is called Melty Cheese and that recipe is in our archives under

that name. It, of course, is abit like nacho cheese and you won't be able

to shred it, but it would work very well for this recipe.
