SERVE with tortilla chips. VARIATIONS: Add ¼ cup Diced Green Chiles or 2 teaspoons Diced Jalapeños. We use soymage vegan, and you can nuke it for hours and it just gets crispy. Veganrella has oats. The only stuff I've found that melts is from imearthkind.com, and we didn't like it as much as the soymage. We've actually made a dip exactly like this, and the cheese never melted. So - I'm curious - what do you use? Or is the term " melt " subjective? I like the Benton Sister's recipe (I believe it is in the archives), but my very favorite is called Melty Cheese and that recipe is in our archives under that name. It, of course, is abit like nacho cheese and you won't be able to shred it, but it would work very well for this recipe.
