Guest guest Posted June 23, 2003 Report Share Posted June 23, 2003 Cashew Banana Cream Pie Source: The Weimar Cookbook --- vintage edition 3/4 cup cashews 1 1/2 cups water 18 dates 3 bananas 1 1/2 tsp. vanilla 1/2 tsp. salt 3 Tbsp. arrowroot or cornstarch Coconut Blend all ingredients, except bananas, until smooth. Add one more cup of water and blend thoroughly. Cook over low heat until mixture thickens. Cool. Slice bananas and place one layer on baked pie crust, cover with half of the cooked filling. Add another layer of bananas and the rest of the filling. Sprinkle with coconut. Chill.
