Tracy > Pineapple Pie > Source: Vegetarian Cooking School Cookbook > > 2 cups Rice Dream milk > 1 cup cashews, blanched > 1/3 cup cornstarch (may require more) > 2/3 cup pure maple syrup > 2 tsp. vanilla > 1/2 tsp. salt > 1 large can crushed pineapple (juice also) > > Whiz cashews and 1 cup milk in blender until creamy. Then add the rest of > milk and remaining ingredients. If you prefer pineapple pieces, do not add to > blender. Heat until thickened, stirring constantly with a whisk.
