Add coconut and lemon rind and blend. Spoon into a pie pan. Don't make crust too thick. Press walnuts all over and freeze. Fill with your favorite fruit filling. I ate them mostly by myself in (gasp) 3 days. (Can I blame it on being pregnant? he he) If you haven't made those you've just gotta!!
