Guest guest Posted June 4, 2003 Report Share Posted June 4, 2003 Cream of Potato Soup 2 c chopped 1 T olive oil 1/2 C diced onion 1 cup corn 1/2 cup peas 1/2 cup baco bits 1 or 2 thinly ( on small cheese grater) shredded carrot 2/3 C diced potatoes 4 C water 2/3 C raw cashews 2 T chicken style seasoning 1 t salt 1/2 t onion powder 1/4 t celery salt 1 tbs cornstarch Steam 2 cup potaoes in a small amount of water until cooked. Place in blender and blend until smooth. Place in a small bowl. Pour olive oil in the bottome of a 2 quart pan and saute onion. Add 3 C water to saucepan and bring to a slow boil. Add blended potatoes and 2/3 C chopped potatoes. Simmer for 5 minutes. Place cashews, 1 C water, cornstarch, and seasonings in blender and blend until smooth and creamy.
