Guest guest Posted May 9, 2003 Report Share Posted May 9, 2003 Quinoa Soup with Corn ***Serve hot or cold*** 1 (14.5 oz) can vegetable broth 1/2 c quinoa, rinsed and drained 1 3/4 c water 1/4 tsp cayenne pepper 2 cloves garlic, minced 1 c frozen or fresh corn kernels 1 1/2 Tbsp chopped parsley or cilantro 1 Tbsp fresh lime juice Rinse quinoa well in a fine strainer. Place broth, quinoa, water, cayenne and garlic in a small soup pot and bring to a boil. Reduce heat to medium and cook 10 minutes. Add corn kernels and cook 3 minutes. Add parsley or cilantro and cook for 1 minute. Remove from heat and stir in the lime juice.
