Guest guest Posted May 7, 2003 Report Share Posted May 7, 2003 Avocado Salad with Creamy Raspberry Dressing Source: Healthy & Hearty Cooking at the Sweet Thyme Inn SALAD Mixed baby greens Sliced thin rounds of cucumber Sliced thin rounds of daikon radish Avocado slices Chopped scallions DRESSING 1/2 cup soy beverage 1/4 cup canola oil 2 tablespoons apple cider vinegar 1 tablespoon maple syrup 1 cup fresh raspberries Combine all dressing ingredients in blender until a creamy consistency is achieved. On a bed of mixed baby greens place several thin rounds of cucumber and daikon radish. Add slices of avocado and chopped scallions.
