Guest guest Posted April 21, 2003 Report Share Posted April 21, 2003 Almost Almond Roca Source: Absolutely Vegetarian 1 cup walnuts, ground 1 cup almonds, raw, ground 1 cup coconut, ground 1 cup dates, ground 3 Tbsp. carob powder 1/2 cup orange juice 2 Tbsp. Minute Tapioca 1 tsp. vanilla Groung nuts for rolling Grind nuts and dates through coarse blade of food grinder. Place nuts, dates, coconut and carob powder in mixing bowl. Combine in small saucepan, the orange juice and tapioca. Cook and stir over medium heat until tapioca is clear, about 6 - 8 minutes. Add vanilla. Combine all ingredients and mix thoroughly. (Fingers work best!). Roll small portions between palms of hands into logs, about 1 1/2 inches in length. Roll logs in ground nuts. Chill until firm. Yield: 2 - 3 dozen pieces. Store in refrigerator.
