Guest guest Posted April 21, 2003 Report Share Posted April 21, 2003 BANANAS IN COCONUT MILK Bananer i kokosmjolk Serves 4 1 3/4 cups coconut milk 1 1/2 tbs sugar (Florida Crystals is vegan; or alternative sweetener) dash salt good 1/3 cup toasted coconut flakes 4 bananas Pour the coconut milk in a saucepan. Add sugar and salt and simmer the milk uncovered on low heat for 5 minutes. Stir occasionally. Toast the flaked coconut in a frying pan until light brown and shake the pan often. Peel the bananas and cut them in 3/4 " thick slices. Put them in the coconut milk and let them simmer for 20 - 30 seconds. Pour coconut milk and bananas in serving bowls and sprinkle with toasted coconut flakes. This dish is also very delicious served cold with vanilla frozen dessert (such as Rice Dream).
