Guest guest Posted March 24, 2003 Report Share Posted March 24, 2003 Corn Tamale Pie Source: Eat for Strength 1 cup corn meal 2 1/2 cups water 2 cups whole kernel corn 3/4 cup chopped olives 1 cup chopped onion 1/2 cup tomato sauce or 3 cups canned tomatoes, omitting the 2 1/2 cups water 1 tsp. salt Make corn meal mush of corn meal, water (or juice from draining the tomatoes) and salt. Simmer remaining ingredients until onion is beginning to be transparent. Place half of the mush in a baking dish. Pour corn-onion mixture on top of mush. Make a third layer with remainder of mush.
