Guest guest Posted March 24, 2003 Report Share Posted March 24, 2003 CURRIED AVOCADO SOUP 8 very ripe avocadoes 2/3 cup lime juice 2 cloves garlic, crushed 2 tablespoons Veganaise 1 teaspoon curry powder 2 cups coconut milk or soy milk (or combo) 2 cups vegan chicken-style broth 1/4 cup minced fresh parsley 2 tablespoons minced fresh coriander or 1/2 teaspoon dried coriander 1 teaspoon Tabasco sauce white pepper to taste In a blender or food processor, puree avocadoes, lime juice, garlic, Veganaise and curry powder until smooth. Transfer mixture to a large bowl or tureen. Stir in coconut milk/soy milk, broth, parsley, coriander, Tabasco sauce and pepper. Cover and chill for up to 3 days.
