Guest guest Posted March 24, 2003 Report Share Posted March 24, 2003 Lima Bean Casserole Source: Eat for Strength 1 1/4 cup dry limas 4 cups water 1/2 small onion 1/4 cup soy flour 1 1/2 cups water 1 cup bread crumbs 1 1/4 tsp. salt or to taste Soak beans in 4 cups water overnight. Adjust water level until beans are covered with about 1/2 " of water. Cook until tender or pressure cook. Put the flour in skillet and heat while stirring until nutty odor is produced. Cool slightly. Add water and salt. Cook until thickened. Pour into beans with 1/2 cup bread crumbs. Pour into a casserole. Top with other half of bread crumbs, and bake at 350 degrees F. for about 30 minutes.
