Generally it is used as a whole grain in dishes like Injera but as more and more people need a variety of gluten free foods, teff is gaining popularity in other forms as well. Enjoy, Brenda-Lee Ingredients 1 1/2 cups (180g) teff flour 1/2 cup (60g) arrowroot starch 2 tsp (8g) Featherweight® baking powder 1 tsp (2g) cinnamon 1/4 cup (40g) flaxseed meal 1/4 cup (30g) chopped walnuts 1/2 cup (120mL) honey or maple syrup 1/2 cup (120mL) walnut or other unrefined oil 1 tsp (5mL) vanilla extract Directions In a mixing bowl, whisk together dry ingredients. Add walnuts and flaxseed meal. In measuring cup, mix liquids together. Stir liquids in with dry ingredients and mix well. Drop batter by Tbsp onto ungreased cookie sheet. Flatten slightly by criss-crossing with a fork. Bake 12–15 minutes in preheated 350°F (175°C) oven. The link above takes you to some recipes. One neat thing about the Bob's site is that they also have a store finder on the left hand side of the screen. Maybe it will be of help to you. I find that the Bob's products in Canada are just a little more than I am willing to pay, but they are nice from time to time.
