Guest guest Posted March 14, 2003 Report Share Posted March 14, 2003 Sprouted Lentil Amaranth Soup 1 onion, chopped 2 cloves garlic, minced 1 tsp. celery seeds 1 tsp. thyme Pinch of tarragon 3 Tbsp tomato paste 4 cups vegetable broth 1 cup precooked Amaranth or 2 Tbsp dry grain 2 medium carrots, sliced 3 cups sprouted lentils Sauté the onion and garlic for a minute and then add the spices, tomato paste, vegetable broth, Amaranth, and carrots. Bring to a boil, add lentils, and lower heat, cooking for 4 minutes or until the dry amaranth is done.
