Guest guest Posted March 13, 2003 Report Share Posted March 13, 2003 Confetti Potato Salad * 12 small unpeeled red potatoes, boiled and thick sliced * 12 radishes, sliced * 2 bunches green onions, sliced * 12 baby carrots, sliced * 2 stalks celery, sliced * 1 bunch parsley, chopped coarsely * 2 jalapeno peppers, minced * 2 tsp sweet mustard (gf) * 2 Tbsp soy mayo * 2 Tbsp Italian salad dressing * pinch Sugar or sweetener to taste * Pepper to taste * Salt to taste Directions: After potatoes are cooked, and while still warm, toss the potato slices in the Italian dressing. Let stand while you prepare other ingredients. Mix all vegetables together and add to potatoes. Add mustard, mayonnaise, sugar and seasonings and toss to mix well.
